Chocolate making
Originally specializing in the manufacture of croquettes, the
Aujoras Company(Morières-les-Avignon), began extending
its product range in 1980. From this date onwards, the
factory began working with chocolate, making fine chocolate
sweets and moulds for Easter and Christmas.
Depending on the time of year you visit the factory, you will
be able to see the production of chocolate for Easter and Christmas.
For Easter, Croquettes Aujoras makes thirty different chocolate
moulds decorated with dark and milk chocolate only. |

The making of Aujoras

It was in 1920, at Jerusalem Square in Avignon, that
M. Aujoras made his croquettes for the first time using his famous recipe.
Half a century later in 1971, Jean Vial founded the Aujoras Croquettes
Company with his son Jean-Claude. Today, the company is directed by Stéphane
Vial, Jean-Claude's son and Jean's grandson, himself a confectioner and
chocolate maker. Thus it is that today, the Aujoras croquettes and biscuit
tradition is perpetuated by the third generation of the Vial family.
All the biscuits are made in a traditional way. During
your visit you will be able to see the making of croquettes,
navettes, macaroons, aniseed biscuits and other varieties which have
made the Croquettes Aujoras famous. At the end of the visit you will
be invited to taste these products as they come out of the oven.
