The Linden of Les Baronnies

Linden is dedicated to Venus, the goddess of love and fidelity, perhaps because the linden flower's leaves are in the shape of a heart. Sedative, slimming, antispasmodic, the linden flower would seem to be cure-all. Buis les Baronnies has for a long time been a reference in the European market for linden and produces in its region 2/3 of national demand. Today, imports from Eastern Europe and China compete fiercely with the linden of Les Baronnies.
The linden flowers are gathered from mid-June to mid-July depending on the altitude. 500 tons of linden blossoms are used each year in the making of the famous infusion.
A little secret: you need 4 to 5 leaves per cup and should not let the water boil. Before bedtime, you will feel a sense of calm and enjoy an untroubled sleep.
