The proprietors of the Terre de Mistral wine estate are from Rousset (near Aix-en-Provence) and part of the vineyard was inherited from their grandfather.


 

In 2008, they wanted to create a range of top quality wines that make the most of the terroir of the Sainte Victoire. Above all, they wanted to share their passion for their work as wine-growers. That's how, in 2008 and in partnership with Denis Gueury, the wine cellar and the olive oil mill of the Terre de Mistral estate were born.

 

Today, thanks to the help of a dynamic team, they are proud to sell their wines in renowned wine shops and restaurants throughout France, as well as in more than ten other countries around the world. Each year, Terre de Mistral welcomes more than ten thousand visitors and tourists attracted by this rural and friendly spot kept alive by the owners' passion and curious to discover the regional products. This great adventure can also be found on the bottles of wine and olive oil as they all bear the name of someone from their family…

Harvest of olives

Our olive oil mill presses the olives from October to the end of December.

 

Anyone can come press their olives at our mill, from small producers with just one olive tree in their garden to the owners of entire olive groves. We also work with professional olive oil makers who entrust us with the task of pressing several hundred kilos of olives each year.

 

In our olive oil mill in Provence, the olive oil is extracted through modern trituration that respects the quality of the fruit. The olives are first deleafed by a big type of vacuum then carefully cleaned with fresh water. They continue on to a mechanical hammer mill, then are mixed in a closed stainless steel kneader. The olive paste derived from this then goes into a mechanical centrifuge where the olive oil is separated from the olive residue. The different olive oils obtained depend on the date of harvest, the varieties (mainly Aglandau, Salonenque and Cayanne) and the land on which they are grown.

 

They are alternately labelled olive oil of Aix en Provence, olive oil of Provence or olive oil of France, with all of them bearing the mention "first cold pressed virgin" and "extra virgin".

The Wine Estate

The vineyards at Terre de Mistral stretch out over some fifty hectares in several parcels. Those farthest from the wine-making cellar can be found on the slopes of the Sainte Victoire mountain.

They grow the grape varieties Grenache, Syrah, Rolle, Cinsault and Carignan, which go into our "AOP Côtes de Provence" and "AOP Côtes de Provence Sainte Victoire" wines.

Gourmet hostel

The team in the kitchen work hard to create for this farm inn an inventive menu with fresh, quality produce, regularly changing depending on the chef's inspiration.

 

This Provençal restaurant distinguishes itself in the the presentation of the dishes and the quest for excellence in its bistronomic cuisine.

The waiters can advise you on the food and wine pairing: an excellent occasion to discover the Terre de Mistral estate's wines.

You will enjoy your meal in a warm and relaxed atmosphere with an unobstructed view over the Sainte Victoire mountain! The auberge also offers group menus for weddings, big family reunions and business meetings with the possibility of having exclusive use of the space. Open for lunch from Wednesday to Sunday and on Friday and Saturday evenings.
