His generosity and committed philosophy are reflected in his proposals for tasting menus in 2, 3 or 4 sequences around the strong flavours of Provence.
In 2021, the Michelin Green Star will be awarded to his committed restaurant.
"We have a guideline for tastes and seasonings and then I compose the menu according to what comes in. Nothing is set in stone, we are not going to force nature to give what it doesn't have."
