I believe these two notions are inseparable from one another. One cannot appreciate and cook truffles without knowing it.
As a farmer in Provence - the region of France where more than 70% of French truffles are produced for many years -, it is my pleasure to transmit everything I learned, from traditional farmers tricks to the most recent findings from research and development in agriculture.
As a Cook, I want to share my recipes with others so that they can better appreciate fresh truffles -the different ways of cooking and preserving it.
With this "Knowing and cooking truffles" course, you will learn everything about truffles in its environment, confront theory with reality by going truffle picking, and learn the basics about truffles cooking.
You will also enjoy the Haute Provence in winter, blue sky, transparent light and biting cold.
The mas des Tavannes
Regional park of Luberon, Vaucluse mountains, oak forest and dry stone.
The house of Tavannes is a nineteenth century farm, dedicated to truffles since that time.
Located in the mountains, surrounded by forests, it has the charm and the austerity of the old farmhouse in Haute Provence. My wife and I restored the farm in 1990, combining authenticity of the place with modern comfort.
Rooms & Meals
Three to six persons will attend the course.
Transport from and to the station, rooms, meals and classes are included in the package.
Located in a Provencal farmhouse, rooms are double or single.
Truffles and wine are on the menu of the different meals and are also included.
FRIDAY EARLY AFTERNOON, I will pick you at the bus station in Apt and take you to the farm (approx. 1h15 drive). The transfert from Avignon TGV train station to Apt is excellent.
ON FRIDAY, you will visit the farm and have a first initiation to truffles.
7:00 pm, drinks and dinner.
ON SATURDAY MORNING, study of the biological cycle of truffles and introduction to basic cooking principles of truffles: cream, butter and truffle slices.
12:00 am, lunch.
ON SATURDAY AFTERNOON, truffles picking in the truffle fields, study of different varieties of truffles, and truffle cooking class in the kitchen : eggs, scrambled eggs with truffles and egg casserole.
7:00 pm, drink and dinner
ON SUNDAY MORNING, purchase and preservation of truffles, truffle cooking class in the kitchen (truffle oil, truffle salad) and truffle picking late in the morning.
1:00 am, lunch.
ON SUNDAY AFTERNOON, free time, walking in the truffle fields or reading different books on truffles and research of truffles recipes.
I will drive you to the bus station in Apt at 4:30 pm.
