The Mazet is our traditional red made from classic local
grape types. It has a deep red colour with an intense minerally nose with
red fruit notes. On the palate it is round, medium to full-bodied with
again, red fruit flavours of blackcurrant and raspberries. The finish is
long with hints of spice. |
Wine Making
The grapes are picked manually and are de-stemmed
straight away. The lightly crushed grapes then undergo a period of cold
maceration of around 2/3 days before the fermentation starts. Following
the end of fermentation the wine undergoes a further period of cold maceration
on the skins in order to extract the fine aromas and flavours. After racking
the wine is transferred to a combination of stainless steel vats and old
oak foudres for the ageing process of around 12 months. |

Deep crimson red colour, the wine has a complex spicy
nose with hints of game and truffle. There is a strong attack on the palate,
powerful rich notes of ripe cherries and blackberries underlined by a powerful
structure of alcohol and ripe tannins. The finish is long and full. This
wine will further age three to six years. |
Wine Making
Specially selected, hand harvested grapes are de-stemmed
at the winery and then cold-macerated for a period of about 3/4 days. The
temperature controlled fermentation starts naturally and a further period
of maceration takes place after the fermentation. After racking the wine
is aged for about one year in mixture of oak barrels and old oak foudres. |
