Each year, the Domaines de Provence strive to bring you traditional products made exclusively from our own parcels in keeping with age-old Provencal tradition. |

Vin Cuit from the Domaines de Provence |
|
The grapes are harvested mechanically, exclusively from our parcel of Muscat of Hamburg.
The red grapes are crushed to release their juice and pulp, known as "must".
The harvest is then de-stemmed, separating the fruit from the woody part of the cluster.
The crushed and de-stemmed grapes are then taken to a cauldron to ferment the must.
The cauldron is heated over a low fire and gently stirred. The must is slow-cooked until simmering.
The aim is to evaporate the excess water and allow the juices and sugars to concentrate.
After fermentation, the "cooked wine" is removed from the heat and left to rest.
It is then stored in 2.25HL oak barrels for 12 months, with no addition of artificial flavours.
Bottling is done without filtration to preserve all the natural flavours.
An excellent aperitif for a taste of the land and Provencal tradition !

Eaux de Vie de Marc de Raisins (pomace brandy)

After the grapes are harvested, winemakers give a certain amount of grape pomace to the regional distillery. The pomace is in fact the skin of the grapes, which, once pressed, can no longer be used in the winemaking process. The amount of pomace given depends on the production of each estate.
The pomace is fermented and heated to obtain an alcohol vapour, then chilled so that the vapour transforms into pure alcohol.
Over the past few years, the Domaines de Provence have acquired several hectolitres of alcohol, stored in oak barrels or plastic tanks.
After ageing several years, the alcohol is bottled by our staff using traditional methods.

Domaines de Provence Grape Juice
|
|
The grapes used to make this juice are exclusively from the Muscat of Hamburg parcel at the Domaine de Clapiers.
Naturally sweeter, this grape variety makes a delicious beverage.
Harvested by hand, the grapes are stored in 15-kg crates, and then sent to a contractor for pasteurisation.
This guarantees a good state of preservation.
Given the quantity of grapes harvested, a Domaines de Provence cuvée was created exclusively from our own grapes.
Children will love it, and their parents will too !

Domaines de Provence Wine Vinegar
|
|
Stored in 2.25HL oak barrels, this vinegar is made from our cuvées of red wine.
Our staff bottles the vinegar by hand using traditional methods. With 5% alcohol content, this vinegar is the perfect way to enhance your vinaigrettes and salads. |
