The meals are a suite of savoury notes and flavours of Provence, in harmony with the bouquet of the great Côtes du Rhône wines ("Grappe Rouge" in the 2005 Michelin Guide). The wine list was put together by Christophe Tassan, Best Sommelier of France in 2004.
The Chef of this restaurant, Thierry Frébout, a lover of local produce and Provençal flavours, is the "master of the house" for over 5 years now. His passion, the truffle of the Tricastin. His pleasure, knowing the customer has been conquered by his cuisine.

His specialties are many and vary with the seasons : Croustillant of Sea Bass with Nyons Olive Tapenade, Sun-dried Tomatoes and an Anchovy Sauce - Lobster and Scallop Balluchon in Chinese Cabbage, a Shellfish and Citrus Fruit Sauce and Vanilla Oil - Noisette of Venison in a Potato Crust, with a Beet Juice Gravy - Open Truffle and Artichoke Ravioli - Pleasures of the Nyons Olive - Crispy Pear and Quince Nems with Cider and Gingerbread Ice Cream. |
