- At the Atelier, restaurant in Arles, we look for the Emotion in our guests. Pleasure is a prerequisite, essential but it is not enough on its own. We wish to go beyond that and and produce in each guest a series of sensations and surprises as intense as they are ephemeral. Each dish should be an emotion. From the speaking of its name to the last bite, it should plunge the taster into a mood of discovery.
- In our restaurant in Arles, we want to renew this feeling of discovery more than fifteen times per meal. We conceive each menu like a complex theatre production, precise and well-regulated. The execution is difficult, intuition is essential but we learn every day. The rhythm of the dishes, the alternation of flavours and textures, the presentation of the dishes, the service, all tends to engender Emotion : joy, surprise, wonder, enthusiasm, amusement, jubilation and indeed even perplexity. We want to see on your faces the effect of our productions. We want to build, through fleeting touches... a lasting memory. |
