Restaurant at the 3 stars hotel - Pont du Gard - Provence




A sun-filled cuisine, rich in colours, awaits you at the restaurant at Le Castellas. Each season, the chef likes to change his menu according to the fresh produce available and his inspirations. Jérôme Nutile doesn't try to dazzle; he seeks to satisfy with an inspired cuisine of honest tastes and flavours.

If we had to sum up his cooking, we could say that we find the best of classical cuisine artfully combined with a veritable contemporary and creative spirit. 

"I adhere to a contemporary cuisine for which I opt always for quality produce. I try to bring out the subtleties of the flavours, update techniques, find the perfect cooking time and seek the exceptional result." (interview with Jérome NUTILE)



The Wine Steward : "Wines, between the perfect pairing and a generous heart.."

His career 
Son and grandson of restaurant owners, Jean Luc Sauron has been, for ten years now, an essential figure at the Hostellerie Le Castellas. This wine steward reigns with pride over a wine cellar strong with several hundred bottles, some holding still little known treasures: Château d’Or et de Gueule from the Costières de Nîmes or a wine from Languedoc, a Saint-Chinian from Domaine Rimbert, Chabrier wine from the Duché d'Uzès, Mas Neuf, Côtes du Rhône Domaine de l'Olivier…
This region also stands out for the quality of its vineyards. Jean Luc Sauron knows how to find, for each occasion, the perfect pairing between the dishes and the wine, to delight the taste buds with the smoothness of a Condrieu, the balance of Châteauneuf du Pape, the finesse of a Crozes Hermitage or the light of the Costières de Nîmes…
