Domaine Font de Michelle... basked in sunshine in the most perfect
geographical location...
You will find
the Domain on the south-east hill-side in Châteauneuf-du-Pape,
the hill-side known as one of the best. The vineyard, with its
typical clayey soil, partly covered by a thick layer of pebbles,
produces elegant red wines full of character and bouquet.
The white wines, sought after and extremely rare, are made using
only white grapes. They are dry and have an extremely full aroma.
The grapes are picked by hand. After being carefully sorted
in crates, where all damaged and unripe grapes are discarded,
the grapes are crushed (60%) and destemmed (40%). The temperature-controlled
vatting is long, lasting from 18 to 20 days. Fermentation is
carried out at 30°, the ideal temperature in order to extract
maximum aromas and tannins. Ageing is carried out in oak tuns
as well as in oak barrels.
Bottling of white wines takes place a year after the grape-harvest,
whereas red wines are bottled 15 months later.
