Starters: Warm and cold duck foie gras, roasted apricots, rosemary apricot sorbet, toasted baguette; Filet of mackerel, green asparagus à la plancha, lemon mousseline sauce; Fresh crab meat and crisp vegetables, seasoned with lime, ginger and mint, crispy Nori leaf.
Main dishes: Big, open scampi and calamari ravioli, slow-cooked vegetables, shellfish bisque; Filet of bream à la plancha, porcini Bolognese, potatoes mashed with semi-salted butter and parsley; Barbary duck filet, mango and pineapple chutney, crispy courgettes from Nice.
Desserts: Prepared sweet and tangy strawberries and raspberries, wild berry sorbet; Manjari chocolate fondant, candied pecans, vanilla ice cream.
