Cook/Pastry chef since 1992, I first worked in the capital : Hotel Vernet, Patisserie Grandin in St Germain en Laye and then as pastry chef in the service of the Prime Minister at Matignon. |

Towards the end of 1996, I settled in England and worked in some of the grand hotels like "St Anns manor hotel", and the "Compleat Angler" in Marlow where I remained as the Head pastry chef. Arriving in Ireland in 2000, I took up the position of Manager at Bruno’s, then that of Restaurant Manager in the famous La Stampa hotel complex.
2003, back in France, I was Maïtre d’hôtel at the "Pavillon Henri IV" in St Germain en Laye and at the superb brasserie "Les Pieds dans l’Eau" in Neuilly sur Seine.

2005, I find myself in Provence, land of all the flavours of which only the names had been divulged to me during all those prior years... aïoli, the little telline shellfish, bull's meat,... you have to be here to really know them.
