Frédérick Pelletier comes to us from the Hotel des Trois Vallées, 4- star luxury establishment in Courchevel. With a degree from the catering school in St Jean du Gard, this young man frm Nîmes, born thirty years ago in Canada, has learned in diverse renowned establishments in the Gard, such as Castellas in Collias (one star), the restaurant Alexandre in Garons (2 stars), the Château de Montcaud in Bagnols sur Cèze, the Magister in Nîmes and others more. Then started his journey with the top chefs of Lyons under the aegis of Monsieur Bouvier at the restaurant the Puy d'or, in the Paris region, Switzerland, Canada at the Manoir des Erables where he received that year the distinction of gold medal for Quebec gastronomy, more recently in Corsica at the Signoria in Calvi, 4 star luxury establishment where he was discovered by Gault-Millau as a young talent 2007.
