Our wine-making methods

The grapes are picked by hand. The reds are crushed, then made into wine in the trditional manner. Whites and rosés ferment in thermoregulated vats. The wine-making is carried out, as the grapes reach complete maturity, according to the soil and the the age of the vines.

The blending is carried out when each wine is ready to be sampled. Two types, selected amongs the oldest vines and from the best soil, are matured in vats.
Fining and filtering are limited to the necessary minimum, and and we do the bottling is done in our cellars.

The Côtes du Luberon wines "Oppidum", "Vieilles Vignes" et "Quercus" are the products of the best soils. The natural concentration of these wines allows them to age harmoniously while keeping all their aromatic potential.

"La Garance" is a Côtes du Ventoux wine produced from 2.5 hectares of the oldest terraces, encircled by pine woods. It's a potent wine, the result of over-ripe grapes and a long fermentation. The Vins de Pays de Vaucluse Syrah, Cinsault and Chardonnay wines are made folowingthe same strict cultivation: limited yield, hand picking of the grapes.

The domains lasted fruit of ourefforts is the"muscat", a partially fermented grape must. This is a light muscat, fine and fruity, very pleasant as an apéritif or with foie-gras or even with dessert.

The eaux-de-vie de marc de Provence are distilled at the domaine in a still over an open fire and aged in casks.
