Grape varieties: Syrah, grenache, mourvedre,
carignan.
Wine-making method: A selection of wines
having undergone long fermentation and matured for 18 months
in separate vats. Blending of the four grape varieties just
before bottling.
Tasting : A dark and intense ruby colour.
A complex bouquet of pear, tabacco, mint with hints of cocoa
and caramel. Well concentrated on the palate, where the woodiness
dominates with hints of roasted aromas, tabacco and mint.
Intense and well-structured with subtle tannins.
Accompanying dishes: To enjoy with marinated
game, flavourful cheeses and chocolate desserts.

nice aromatic complexity.

with grilled fish, shellfish, salads, cheese

COTES DU VENTOUX ROUGE La Garance 2001
Appellation : Côtes du Ventoux
Type: Red
Vintage : 2002
Grape varieties : Syrah, grenache, carigan
Wine-making methods : Hand picking. Small
yields, approximately 18hl/hectare. Partial crushing, fermentationof
the three grape varieties together for three weeks. Unfined
wine, natural sedimentation, minimum filtering.
Tasting: Nice ruby colour. A bouquet of licorice,
violet, spices and pepper. Fleshy on the palate, where spicy
aromas and hints of licorice open up with with harmonious
tannins. Elegant and full-bodied, it has a long, lingering
finish.
Accompanying dishes: To enjoy with game,
red meat and flavourful cheeses |

Wine from
overripe grapes (muscat)
Appellation : Muscat doux
Type: White
Vintage : 2002
Grape varieties : small grape muscat
Wine-making methods : grapes picked by hand
at over-maturity, transferred before the end of fermentation
to S02.
Tasting : A delicate bouquet of citrus, spice
and mint with hints of bergamot. Lively and supple with a
good aromatic intensity.
Accompanying dishes:as an apéritif,
with foie-gras, desserts |

Melon
Eau-de-vie
Appellation: Alcohol
Type: White
Vintage :1998
Wine-making methods : 10 day fermentation
of the fruit after selction and seed removal. The must thus
obtained is then distilled for 6 hours in a copper still over
an open fire at 80°C. The distilling of the pulp allows
it to retain the fruit's taste. Fresh from the still, the
eau-de-vie de melon is at approximately 59° proof.
Tasting: A bouquet of ripe fruit. Supple
en bouche, fleshy and full-bodied.
Accompanying dishes: As a digestif, or a
cocktail with seltzer, or fresh melon juice, ice and squeezed
lemon. Accompanies fruit salads with melon. |
