It's winter, the best season for enjoying red wines. At the end of a day of fierce winds that have sent the clouds scuudding across the sky, prepare the dishes that go best with the reds of Luberon : beef stews and casseroles of pork or boar, chicken spit-roasted in the fireplace, full-flavoured goat's cheeses, chocolate desserts, pears...

To whet your appetite, let yourself be seduced by a Côtes du Luberon white in all its fineness, with the aromatic intensity of the rolle grape, the candour of the grenache and the hints of anise and violet as well as the crispness of clairette. Enjoy it as an apéritif with tarama, green olives, or a bacon focaccio.
