The lime tree is dedicated to Venus, Godess of love and fidelity, perhaps because of its leaves which are looking like hearts. Calming, slimming, antispasmodic, the lime tree flower seems a panacea. Buis les Baronnies has been for such a long time the reference in European market, for the lime tree and has been produced in this area more than 2/3 of the national needs. Nowadays, the importations from Eastern Europe countries and from China compete with Baronnies' lime trees. Every year, the flowers' collect takes place from half of June to half of July according to the altitude it is situated.
500 tons of lime flowers are used every year for the famous infusion. A small secret : 4 to 5 leaves are needed to make it for a cup of infusion and never make the water boiled. Before going to bed, it will be the insurance of serenity and of a calm night !
