ANCIENT KNOW-HOW
The Rules are basic : a manual selection at the harvest to ensure that only perfect grapes are used; a judicious blend of thirteen grape varietals to emphasize the aromatic complexity of the wine ; a long maceration of about three weeks to obtain the required depth and structure ; finally a refined barrel aging : that's it but it's an Art !
