From the end of November to the end of March, the Drôme Provençale and the Enclave des
Papes live to the rhythm of the black truffle, the famous Tuber Melanosporum so highly
prized by great chefs and gourmets throughout Europe. Each year goes by and each is different
from the last … Truffles will be abundant and inexpensive one year, rare and exorbitantly
priced the next, but each year they appear and the dogs dig up hectares of truffle fields searching
for the cherished mushroom, of which 60% of French production comes from this region.
The capital of the black truffle is called Richerenches, a small village sheltering behind
thick Templar-built ramparts, organises since 1927 the biggest truffle market in Europe.
Every Saturday morning in winter, truffle-growers from throughout the region come and fill
the streets of the village, their sack of truffles in their hands, watching the evolution of the
prices and looking for the best broker to whom they will hand over their precious harvest.
Over a weekend, the Serre de la Maniette offers you an initiation into the secrets of the
black truffle and its incomparable flavour.
