The idea of the restaurant La Chassagnette is to allow a chef to express his talent by glorifying organic products and, in particular, the freshly gathered fruits and vegetables from the garden and the produce of Camargue agriculture, such as organic rice and bull.

A very great majority of the products used in our cooking is organic and the garden bears the Ecocert label. In time, our objective is to reach 100% organic. We also call upon equitable commerce. In my eyes, La Chassagnette is a restaurant unlike any other : these ethical demands give it all its meaning."
